We’ve said it before and we’ll say it again; we love starting our mornings off right!  We know most of you lead incredibly busy lives and prefer those 5 extra minutes of sleep, but who said breakfast has to be a tedious task?  That’s why we’re sharing another recipe that’s wholesome and nutritious, and takes 15 minutes to make.  Piece of cake!  Without the calories 🙂

Easy Peezy Baked Eggs

Ingredients 

  • vegetable oil
  • 4 large eggs
  • sea salt, ground pepper

How To 

Preheat oven to 450.  Very lightly grease two small ramekins or baking dishes with the vegetable oil.

Now for the fun part!  Pick any veggies of your choosing- spinach, tomatoes, onions, mushrooms…anything your heart desires!   Chop those scrumptious veggies up and then place in the lightly greased dishes.

Lastly, crack a couple of eggs in each dish and season with sale and pepper.  Place in the oven for 8-10 minutes or until the whites are set.  Enjoy and contemplate how wonderful your morning is.
